THE INCIDENCE OF THE CONSUMPTION OF BOVINE MEAT ON THE FOOD SECURITY OF THE POPULATION OF THE CITY OF GUAYAQUIL, PERIOD 2015-2020

This research analyzed the production and consumption of beef and its impact on food sovereignty and security in the city of Guayaquil, given the malnutrition problem faced by countries worldwide and especially those in developing countries such as Ecuador. , which occurs as a consequence of inadequate nutrition in homes due to limited access or availability of healthy and nutritious food for a good nutritional contribution to health. The results show that there is a sustained growth in the availability and also stability in the supply of beef during the period 2015-2020; and that the level of household income is not an impediment for the consumption of bovine meat in the people of Guayaquil. In this order of ideas, the stability of beef is guaranteed in the city, since there are markets where beef from various provinces of the country is received and stored, as well as supermarket chains that sell beef res and its derivatives, offering easy access to the population. The supply and consumption of the product exceeds the nutritional source according to the minimum amounts established by international non-governmental organizations such as the FAO. One of the conclusions of the study is that consumption of beef in the city of Guayaquil does not affect sovereignty or food security.
